Portokalopita: a Greek orange cake ready in 30 to 60 minutes
Portokalopita is a Greek orange cake made largely from chopped sheets of filo pastry. Elena Cremer describes her vegetarian recipe as simple and says it can be prepared in 30 to 60 minutes. She uses less sugar than the cake she tasted in Athens, which she considered too sweet. According to Cremer, the reduction affects neither its moist texture nor its flavour. She also says the cake becomes more aromatic after one to two days when stored in airtight packaging.
